Executive Chef Peter Robinson and his team work with exceptional Vermont and New England farmers, producers and artisans to create seasonal Contemporary American cuisine rooted in craftsmanship and place.
Guests enjoy the same menu in two distinct settings: the elegant Birches Dining Room or the warm, inviting Tavern. In warmer months, dining extends to the Orchard Terrace and Pavilion, while the historic Wine Cellar and Library offer distinctive private dining experiences.
Winter brings the fireside Evergreen Lounge for après-ski drinks, light fare and relaxed evenings, along with private gondola dining featuring an Alpine-inspired prix fixe menu.
The Birches Dining Room
Elegant and inviting, the Birches Dining Room offers a refined setting for dinner beside a wood-burning fireplace, with views of the Inn’s gardens and surrounding landscape.

In warmer months, dining moves outdoors to the Orchard Terrace and Pavilion, surrounded by the Inn’s beautiful gardens, wildlife and mountain landscape.
